Ice Cream Cakes from JP Licks

My friend Nathaniel, a fellow August baby, also shares a fondness for ice cream birthday cakes. So, to celebrate his birthday this year, what could be better than an ice cream cake from JP Licks?

We went for a medium Oreo cake - two layers of well-packed oreo ice cream with a layer of fudge between, crushed oreos on the sides, and oreo halves decorating the top. The medium is an 8-inch round - six of us ended up eating half of it, so there's plenty left for the birthday boy to graze on over the next week. The ice cream itself was, as usual, fantastic, and the layer of fudge - pure chocolate - was a much tastier alternative to that waxy frosting that is on so many other ice cream cakes.

JP Licks keeps other flavors of ice cream cakes in stock as well, or they will make a custom cake with 48 hours notice.

<img alt="J.P.
Eyes And Taste Buds Disagree

The MexiCali burrito at MexiCali Burrito Co. at $6.25 comes with 1 filling, 2 toppings, rice, and beans. This allows for what may be my most frequent burrito ordering configuration: meat, beans, rice, salsa, and guacamole. That means no sour cream, no cheese. Lactard style.

Eyes: This wasn't the best looking burrito. Poor ingredient distribution shows the rice on the right, meat and beans on the left, and the guacamole folded in the lower part of the photo with tortilla on both sides. And a lack of structural integrity.

Taste Buds: I really liked it. I ordered their chile colorado, which is spicy pork in guajillo chili sauce. I devoured this thing.

I'll have to return for a second opinion to settle the eye / taste bud dispute.

This place has a long line, that place isn't what we're in the mood for. Somehow, the Coolidge Corner Clubhouse gets suggested and we'll go in because nothing else sounds right. And then I order my favorite chicken sandwich and start berating myself for not thinking of the Coolidge Corner Clubhouse sooner.

The menu at CCC is huge, broken up into salads, grilled chicken, burgers, mixed grill, fajitas... and it keeps going. But the thing I've been ordering lately is the Tom Brady (yes, many of the sandwiches have Boston-based sports names... what do you expect from a "sports pub"?). Grilled chicken with boursin and bacon... sounds like heaven, right? It really is. The chicken is well-cooked and moist, and the boursin is all kinds of garlicky and delicious. The curly fries on the side, which come in a vast heap, are crunchy and fried to perfection. They're also great for cleaning up any boursin that may have escaped the sides of the sandwich.

The chicken sandwiches at CCC are huge and will keep you filled all day. There are many other great sandwiches (and meals, for that matter) on the menu, but I've had a hard time not ordering the Tom Brady.

Now, I've been known to go on Kashi kicks - the Go! Lean Crunch bars were a feature of a particularly long kick, well over a year - and it's clear to me that this new cereal, Honey Sunshine, will be in my pantry for quite a while to come.

Kashi calls Honey Sunshine "puffy cereal pillows," and that's a pretty accurate statement. They have a fantastic crunch and tons of honey sweetness. I've never been one to put milk in my cereal, so I've really enjoyed the crunchy goodness of this stuff. It's reminiscent of Cap't Crunch, only less-sugary and more satisfying (thanks to an increase in fiber).

Unfortunately, Market Basket has been the only place I've been able to find Honey Sunshine, and that means a drive out to the suburbs. On my last visit, I ended up buying 4 boxes, which she keep me happy for at least a little while. Anyone seen this anywhere else around Boston?

It's not breaking a hand. It's not even losing a hand. The worst thing is spilling water on one's most beloved of possessions - the laptop. I kind of want to lie down and die and I so wish I were exaggerating.

I spilled about 150mL of water on the keyboard. I turned the laptop upside down and removed the battery straight away. It dried overnight with a fan on it (as you can see in the picture taken with my phone since I NO LONGER HAVE A LAPTOP to load pictures onto), but still didn't start this morning.

On the laptop was a half written post about my trip to London (for work - just got back on Monday) as well as all the associated pictures and gobs and gobs of data, files, pictures, and well, my life. Please everyone cross your fingers for me. Cross everything you have. This is me not freaking out, by the way. One of several restaurants that now can be found in the center of Belmont, Patou Thai concentrated mostly on authentic Thai dishes, though a few more familiar Americanized Thai dishes are also offered here. Atmosphere is serene and low-key, and a patio out back allows patrons to be able to eat outdoors in the warmer months. To read more about Patou Thai in Belmont, please click on the link above.

Over the weekend, on our way to Belkin Family Lookout Farm with the kids, we drove by two nice-looking bicycles out by the street with a "free" sign on them. My first instinct was to fling open the door, roll out of the moving car, then dart across traffic on what really isn’t a very busy road at all. Free bikes!!! And they looked new.

In reality, I restrained myself. We were already late to meet our friends, and the back of the car was filled with crap, as usual. Plus Husband doesn’t enjoy these kinds of pit stops and he hadn’t had his morning coffee, yet, which meant we were bound to have a big fight about it. About stupid bikes. I had to ask myself if this was going to ruin the whole tone of the day. I agreed to let it go. If one of the bikes was still there when we got back, I reasoned, then I was meant to have it.

But, the bikes were not there when we got back. Of course, they weren’t. Who’s going to pass up free bikes? I glared at Husband. Without even realizing it, I had spent much of that morning’s drive charting my prospective bike routes around town. How I could get to Russo’s by just taking the bike path along the Charles. Ditto for DePasquale’s on the other side of the river. Then I would hitch a double-wide trailer to the back and head out on 117 to the farmshare and really piss people off on their evening commutes. I could do all my shopping by bike during the month of October, leaving a virtually untraceable carbon footprint, and then I would finally be crowned the winner of the Eat Local Challenge!

Not anymore. I can’t help but think that fate got it wrong this time. One of those bikes was supposed to be mine. Somebody, probably in my very own neighborhood, maybe even right this minute, is riding it. Smiling, no doubt. And I’m mentally thrusting a stick through the spokes of the wheels riiiiiiiight…….now.

RichArt Florals

Not too long ago, I was wandering around the Copley Mall and stopped into the RichArt chocolate store. I've always passed this place by before, because I generally only use the Copley Mall as an indoor passageway between Copley Square and the Prudential Center (although occasionally, William-Sonoma or Banana Republic will entice me in). But on that day, I was feeling liberal with my money (I don't know why, I don't have any) and went in.

And fell for the sales pitch. Because the last thing I needed was a box of 20 gourmet chocolates. But I was really interested in how they break down the different flavors into seven categories. The sales woman walked me through the different categories of balsamic, roasted, fruity, citrus, herbal, floral, and spiced. They all sounded good, but I went with the florals, because I love rose-flavored foods.

The little booklet that comes in the box suggests sampling the chocolates in a particular order so that nothing gets overwhelmed. And I could see why after tasting just a few. The first, the Neroli Ganache, was light and only vaguely floral. The Wildflower Ganache was my least favorite of the bunch, overly lemony and almost antiseptic. Next was the Alpine Flower Ganache - I'm not sure which Alpine flower this was supposed to be, but again, it was only vaguely floral and not overpowering at all. The next two, Ylang Ylang Ganache and "Rosae" Geranium Ganache, were my favorites. The Ylang Ylang was bright in flavor, like tropical fruit, and almost tasted like banana, while the Rosae Geranium had a lovely, intense but not overwhelming rosey flavor. Next up was the Lavender, which had a very subtle lavender flavor and was not at all soapy, which can be a problem with lavender-flavored things. The last in the list was the Exotic Flower Coulis. Because it was a coulis and not a ganache, the filling all came out with the first bite, intensifying the flavor - I think it would have been more enjoyable if I hadn't gotten it all in one bite. As it was, the flavor was a little too perfumey for it to be enjoyable, although the flavor mellowed over time and became almost nutty by the end.

Now that I've tried 7 of the 49 different flavors, I'm intrigued to try the rest. Overall, the flavors were subtle, balanced, and well-done, not too in-your-face. There are a lot more unique choices (like basil) that really have me interested, so I may go back out of sheer curiosity. And I think the small boxes would make a great hostess gift, since they're under $25 and offer a variety of tastes.

Melissa at Baking A Sweet Life has done something no other food blogger was able to accomplish for months. She got me to participate in a food blogging event. Her secret weapon was quinoa. "Quin-what?" you say. Quinoa (pronounced keen-wah). It's been one of my favorite grains since I tried it 4 years ago. It has a slight crunch and goes particularly well with seafood and poultry. But I've

Personal Peach Upside-Down Cakes

I'm not a big fan of peaches on their own - too fuzzy - but peaches incorporated into other things - skinless - are awesome. So while watching the Peachy Keen episode of Good Eats the other day, I was excited by Alton's recipe for individual peach upside-down cakes. Portion-controlled cakes, topped with (skinless) peaches, hot out of the oven and topped with ice cream? Upside-down cake without overly-sweet pineapple? I'm there!

The recipe below is with my edits; the original is in the link above. The recipe makes 4, but I was making 6, and math is not a strong suit... so I've left my recipe for 4. Although the picture above is just the cake, we served these with ice cream... which melted almost right away, making another picture impossible. But it was delicious, so ice cream is definitely the way to go.

Personal Peach Upside-Down Cakes
2 medium peaches
3 Tablespoons unsalted butter, divided
2 2/3 Tablespoons dark brown sugar
1/2 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon kosher salt
1/3 cup granulated sugar
1/2 cup buttermilk, room temperature
1/2 teaspoon vanilla extract

Preheat oven to 350&deg. Blanch the peaches in boiling water for about a minute, then cool. Peel off the skin, then cut in half and remove the pit. Cut each half into thin slices, about 16 slices per peach.

Divide 2 Tablespoons of butter between 4 (6 ounce) ramekins (1/2 Tablespoon in each). Melt the last tablespoon of butter and set aside. Divide the brown sugar between the ramekins (2 teaspoons in each). Arrange peach slices on top of the brown sugar. Set aside.

In a medium mixing bowl, mix together flour, baking powder, baking soda, and salt. In another bowl, mix together the sugar, buttermilk, vanilla, and melted butter. Add the liquids to the flour mixture and stir until combined. Spoon mixture onto peaches, dividing evenly among the ramekins. Place on the middle rack of the oven and bake for 20 to 25 minutes or until a toothpick inserted into the cake comes out clean.

Wait a few minutes before serving. Run a sharp knife around the edge of the ramekins to loosen the cakes. To serve, place a small plate over a ramekin, and then turn over to release the cake. The butter and brown sugar will have formed a sauce. Top with ice cream and serve quickly.

camp food kind of sucks, unfortunately, so nothing exciting to report in that department except:

- brownies with peanut butter smeared on top are delicious, and great dancing fuel

- barbecue potato chips are much more satisfying as a mid-dance fortification than sweets

- a dark chocolate zone bar and a thimbleful of coffee is enough to get you through two dance classes if you sleep through breakfast (though a cabinmate came up with the genius idea of bringing instant oatmeal packets and using the hot water for tea to make instant brekkies)

- thousand island salad dressing makes everything taste good

Did I mention that a certain someone starts school this week? Free school. FREE. All day, five days a week.

Yes, this is the time when the Preschooler becomes a kindergartener, the Toddler becomes a preschooler, and I curse myself for thinking up names for the kids that would change every goddamned year. (To be fair, I thought I’d quit blogging after two weeks, but haven’t I caught on by now that nothing happens like you plan?)

I was thinking of just calling the Preschooler the Kindergartener, and the Toddler the Preschooler. Creativity isn’t my strong suit, as you well know. But that nomenclature is likely to be confusing. Like, how did the Preschooler go from being a sweet and gentle boy to a noisy brute practically overnight? (Public school, that’s how. We must all lose our innocence someday.) So, if anyone has a better idea, let’s hear it.

Anyway, given the new, freeing kindergarten schedule, you may be wondering how I plan to spend my time? Rather than doing the work needed to sustain a freelance career, I think I’ll start by acting out scenes from Women on the Verge of a Nervous Breakdown instead.

Yes, that is a fantastic idea. I’ll start with gazpacho. Lots of gazpacho. Then I’ll mope around as if I’m despondent about the recent turn of events. Why does he have to go to kindergarten? Why, why, WHY? There will be much pacing and hand-wringing, not to mention checking voicemail every two minutes. Oh, and throwing things just to be dramatic. I really don’t do enough of that. I don’t want to die having never thrown anything through a plate glass window in a fit of rage. That would be a waste.

I just hope that after all of the lighting things on fire, high-speed scooter chases, gazpacho at gunpoint, and dancing half-naked in windows play out, Husband doesn’t make me go out and get a real job.

Gazpacho

This recipe is straight from Spain and is my absolute favorite. You can thicken it up with bread soaked in water if you like. Adding garlic is also fair game. Sleeping pills are optional.

4 large tomatoes
1 cucumber
1 bell pepper (green is traditional, but I prefer red)
¼ medium onion
6 Tbsp. olive oil
2 Tbsp. red wine vinegar
1 tsp. salt
Black pepper
Cayenne pepper to taste

In a large pot of boiling water, dunk tomatoes for 20 seconds or so, then submerge in ice water until cool. The skins should slip right off. Core tomatoes, then cut in half across the equator and squeeze out the seeds. Cut into quarters and place tomatoes in blender.

Peel cucumber and cut in half lengthwise. Holding a spoon upside-down by the handle, dig a trough along the length of the cut side of the cucumber to remove the seeds. Cut into pieces and put into blender, reserving one piece to chop for garnish. Core and remove seeds from pepper. Reserve one piece to chop for garnish and add the rest to the blender. Add onion (chop some extra for garnish), olive oil, red wine vinegar, salt, pepper, and cayenne. Purée until smooth. Taste and adjust seasonings if necessary. Refrigerate. Serve chilled topped with chopped red pepper, cucumber, and onion.

Chocolate soufflé

Writing about a chocolate soufflé reminds me of a college ballroom dance competition. Imagine all the geeky girls (engineering and computer science majors), shedding their glasses and baggy sweatshirts to dress like hookers for a day. For the practice sessions, we wore our usual baggy attire plus heels. But for the competition, you had to look the part, and rumba in denim overalls just didn't

In the spirit of Labor Day weekend, I did manage to put in some hours of actual labor on the farm. Although, judging by the amount of dirt all over me and pouring out of my shoes afterwards, you would have thought that something else had gone on in those fields. No such luck. We weeded spinach, planted lettuce and basil, and that was all. I have witnesses.

Since there was nowhere to hide in the open fields, I finally had a chance to chat with the Farmer for more than five seconds. Chat and plant, plant and chat. Except chatting is something I find hard to do in combination with other things. I’m more of a one-activity-at-a-time kind of girl. Still, I think it’s important to stick your pinky finger out of your comfort zone twice, maybe three times a year.

That there was any dialogue at all was a miracle given the cacophony going on in my head:

Me: What’s he talking about?

Me: Pressure cookers, I think. Stop crushing the lettuce.

Me: I’m not. This is what he showed me.

Me: I’m quite sure he wasn’t pounding the lettuce into the ground with his fists.

Me: Shut up, I can’t hear. What’s he talking about now?

Me: How sungolds make the best pasta sauce ever.

Me: Mmmmm, I bet he’s right. I wonder if he peels them all. He couldn’t possibly. That would take freaking forever.

Me: Why don’t you ask him?

Me: No, you ask him.

Me: You better pick up the pace. If he gets too far ahead of you, he’ll start talking to that other guy.

Me: Right. I don’t think he’s talking anymore. He’s not. Crap. Say something.

Me: Ummmmmmm…..

Me: Anything.

Me: Uhhhh…

Me: Comment on those weird-ass husk tomatoes you tried last week. Only make it sound like you really liked them.

Me: Okay, I just told him.

Me: What did he say?

Me: He thinks they’re gross.

Me: Goddamnit!

I wonder what the odds are that any of my lettuce is going to survive?

We can’t stop the tomatoes; we only try to contain them.

We’re getting 10 lbs a week from the farm share these days, plus nearly that much from the garden. Two weekends in a row included a peel & seed session and a batch of crockpot red sauce. Three gallons in the freezer so far, separated into 1 quart containers.

Today also involved some tomato peeling & seeding, but this time for gazpacho. That’s what’s going on in the background of the photo. In the foreground you see the ingredients for some salsa verde (sans the zucchini) that will be constructed later on today. Below is the rough recipe I went by. It’s crimped from both Cook’s Illustrated and Bittman’s HTCE with adjustments for what I had and how I like it.

Gazpacho

6 lbs ripe tomatoes

4 cucumbers

4 shallots

2 garlic cloves

2 rounds pita bread

2 t salt

1/2 t fresh ground black pepper

1/3 cup good quality white wine vinegar

1/2 cup good quality olive oil

Peel, seed and loosely chop the tomatoes and the cucumbers. Preserve as much of the juice from these as you can, discarding the skins, seeds and pulp.

Chop or tear the pita bread into chunks and soak in the reserved juice plus water to cover if necessary

Working in batches if necessary (and unless you have an industrial sized Cuisinart, it will be,) load up a food processor with all the ingredients except the olive oil. Pulse a few times, then leave on for 20-30 seconds to get everything very well blended. With the machine still on, slowly drizzle in the olive oil. Note: since it’s all going to get stirred together in the end I don’t worry about perfectly divided batches; for instance, i’ll do all the bread with the first batch and all the olive oil in the last

Pour each batch into a large, non-reactive container and chill for a couple of hours before serving.

There’s several additional things you can do to spruce this up for serving:

chop up another pita round into bite size pieces, toss with olive oil and toast to make crutons

finely chop another cucumber and/or tomato and use to top each bowl

drizzle with more olive oil
